Crispy Chicken Caesar Salad Pizzas

All the flavors of a classic Caesar salad, served on a crispy, cheesy chicken crust.

If you love a good Caesar salad, this one is for you. These crispy chicken Caesar pizzas are a fun, protein-packed twist on two of my favorite things: pizza and a really good salad.

Instead of traditional pizza dough, the crust is made with ground chicken, parmesan, garlic, and herbs, baked until golden and crispy around the edges. Each little pizza is topped with crunchy romaine tossed in a homemade, lemony Caesar dressing, plus plenty of freshly grated parmesan.

They’re light, satisfying, full of flavor, and surprisingly simple to make. Perfect for an easy weeknight dinner or a protein-packed lunch.

The best part? You can make them into individual mini pizzas or one large crust to slice and share.

Prep Time: 15 minutes
Cook Time: 16–20 minutes
Total Time: 35 minutes
Servings: Approximately 8 mini pizzas

Ingredients

For the Crispy Chicken Crust

● 1 lb ground chicken (or boneless, skinless chicken thighs)

● 2 garlic cloves

● 1 large egg

● 1 tsp sea salt

● 1 tsp freshly cracked black pepper

● ½ tbsp paprika

● 1 tbsp Italian seasoning or dried oregano

● ½ cup freshly grated Asiago or parmesan cheese

● Olive oil or avocado oil spray, for the pan

For the Homemade Caesar Dressing

● 3 tbsp mayonnaise

● 3 tbsp thick plain Greek yogurt

● 1 tbsp Dijon mustard

● 1½ tbsp apple cider vinegar

● Juice of 1 large lemon

● 1 garlic clove, finely minced

● 3 anchovy fillets, finely chopped (optional, but highly recommended)

● ¼ cup freshly grated parmesan cheese

● Sea salt, to taste

● Plenty of freshly cracked black pepper

● Additional lemon juice or water, as needed to thin

For the Salad & Toppings

● 2–3 romaine hearts, finely chopped

● Freshly grated parmesan cheese

● Freshly cracked black pepper

● Optional: crispy bacon, diced tomatoes, or sliced avocado

Instructions

1. Preheat the Oven

Preheat your oven to 425°F. Lightly grease a large sheet pan or pizza pan with olive oil or avocado oil spray. For easier cleanup, you can use lightly greased parchment paper.

2. Prepare the Chicken Crust

If you’re using boneless, skinless chicken thighs, add them to a food processor and pulse until finely ground.

Add the ground chicken, garlic, egg, salt, pepper, paprika, Italian seasoning, and grated cheese to the food processor. Pulse until everything is thoroughly combined into a thick, sticky mixture.

3. Shape the Mini Pizzas

Divide the chicken mixture into approximately 8 portions and spread each one onto your prepared baking sheet.

Using the back of a spoon or lightly oiled hands, press the mixture into very thin circles. The thinner you spread the chicken, the crispier the crust will become.

Don’t worry about making perfect circles. I actually love the rustic, uneven edges!

4. Bake Until Golden

Bake for 16–20 minutes, checking around the 15-minute mark, until the crusts are golden brown, cooked through, and beginning to crisp around the edges.

The chicken should reach an internal temperature of 165°F.

Remove from the oven and allow to rest for a couple of minutes.

5. Make the Caesar Dressing

While the chicken crusts bake, prepare your dressing.

In a medium bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, lemon juice, minced garlic, anchovies (if using), and grated parmesan.

Season with salt and plenty of freshly cracked black pepper.

Taste and adjust as needed. If the dressing feels too thick, add a splash of water or extra lemon juice until it reaches your desired consistency.

6. Toss the Salad

Finely chop your romaine lettuce and add it to a large mixing bowl.

Pour the Caesar dressing over the lettuce and toss until every piece is lightly coated. Add the dressing gradually so the lettuce stays crisp rather than becoming overly saturated.

7. Assemble & Serve

Top each warm chicken crust with a generous pile of dressed romaine.

Finish with more freshly grated parmesan, cracked black pepper, and any additional toppings you love.

Serve immediately while the chicken crusts are still warm and crispy and the lettuce is cold and crunchy.

Enjoy!

A Few Flour Girls Tips

The thinner, the better. The secret to getting those crispy edges is spreading the chicken mixture as thinly and evenly as possible.

Fresh parmesan makes a difference. I always recommend grating your own. It melts beautifully into the crust and gives the dressing a much better flavor.

Don’t skip the anchovies! If you love traditional Caesar dressing, anchovies add that savory, salty depth without making the dressing taste fishy.

Keep the lettuce cold. The contrast between the warm, crispy chicken and the chilled Caesar salad is what makes these so good.

Make it ahead. The chicken crusts can be baked in advance and stored in an airtight container in the refrigerator for up to 3–4 days. Reheat them in the oven or air fryer until hot and crispy before adding the salad. Store the dressing separately and toss the lettuce just before serving.
